A Cat Called Citrus

For the cake, you’ll need:

Juice of 2 large Lemons

1.5 teaspoons of Applesauce

1 1/2 cup Flour (I used wheat (self-raising organic))

1 cup Sugar (I used 1/2 cup Raw Sugar, 1/2 cup Brown Sugar)

1 teaspoon Baking Soda

5 tablespoons Oil (I used Sunflower)

1 teaspoon Vinegar (I used Apple Cider Vinegar)

1 teaspoon Vanilla

3/4 cup Water

For the Icing:
1 and 1/4 cups Pure Icing Sugar
1 tablespoon fresh Lemon juice mixed with water 1 tablespoon of Water

 

 

Now I’ve got it, what do I DO with it?

Put flour, sugar, and baking soda into a mixing bowl and mix well.

 

Juice the lemons, and in a separate bowl from the flour, mix the juice with the applesauce and the water.

 

To that add the oil, vanilla and vinegar. Mix very well.

 

Then pour the wet ingredients into the flour and mix well with a whisk. It will foam a little but keep whisking.

 

Pour into your baking dish, blow it a kiss to give it that all-important flavour of love, and bake for 25-30 minutes at 180 celsius or 350 fahrenheit.

 

Let it cool down from all that firely oven loven before you cover it with your lemon icing of awesome

 

(TIP! I actually froze mine before cutting it up resemble a kitty)

 

 

For the icing: Sift icing sugar into a medium bowl. Gradually add the watery lemon juice, stirring with a wooden spoon until a smooth paste forms (you may need more lemony water, that’s okay. Just wing it until it’s a nice thick, smooth paste). Spread icing evenly over cake. You can decorate it to look like a cat or yoda or whatever after about 10 minutes, or when it’s set.

You may now eat your kitty. This is the closest anyone should ever get to eating an animal. Enjoy
